Van Meal Recipe - Pumpkin and Feta Pasta

After a beautiful weekend down south in the Sunny Van, we thought we would share one of our favourite meals to whip up on the road!

Ease and simplicity really are the keys with van meals - often times you'll only have a single burner on your gas cooker and don't want to buy too many ingredients that take up valuable fridge space, so this recipe ticks all the boxes for life on the road. Set up out the back of the van, or if it's not too windy, right on the beach! 

Here's what you need:
- pumpkin
- your favourite type of pasta (we like fusilli or penne)
- feta
- spinach
- red onion
- salt and pepper

The steps:

1. Chop the pumpkin into cubes. Boil until soft. Drain and set aside.

2. Cook the pasta in salted, boiling water. 

3. While the pasta is cooking, roughly chop the feta, spinach and red onion.

4. Once the pasta is cooked, drain it and return it to the pot. Add the pumpkin, feta, spinach and red onion. Add salt and pepper to taste.

5. Toss all the elements together and serve!

This recipe really is so easy and so delicious. It's also perfect to pop in the fridge and have as a cold pasta salad the next day. Happy travelling and happy eating!
